Today I have two healthy plant based recipes to share. They both require the use of a food processor (or Vitamix if you are lucky enough to have one!).

Zucchini Dip
 
(raw, vegan, gluten free)
You will need:
juice from 1/2 lemon, 1 zucchini, 1/4 cup cashews, pinchof papryka, 1tsp salt, 2 cloves of garlic and 1/4 cup tahini (sesame paste).

Add all of the ingredients to your food processor and blend! Just keep blending until you get the consistency you want.  You can stop a bit early like I did or keep going to get it super creamy.

It is a delicious, healthy dip or it works as a spread. I love dipping carrots in it!
Mixed Nut Bars (vegan, raw)
You will need:
1 cup sunflower seeds, 1/4 cup coconut, 1/2 cup pumpkin seeds, 1/2 cup almonds, coconut oil spray or other oil, pinch of all spice, 1tsp cinnamon, 1/4 tsp ginger, 2 tsp vanilla extract, sweetener to taste.
Pulse your almonds and pumpkin seeds together until you  have small chunks then set aside. Add the rest of your ingredients minus the sweetener and blend. See how it is stick to the sides? You want it ALL to do that! Just keep blending. The natural oils from the seeds will come out and eventually you’ll have a nut butter consistency.
 Mix all of the ingredients together. Lay down parchment in a square pan and spray with the coconut oil (or other oil). Press down on the mixture until it is fairly flat and covered the bottom. Stick it in the freezer for one hour. Now cut your pieces out! If your mixture was too try, they will be quite crumbly (works as granola or trail mix) otherwise they should hold their shape well.  

You can make them thick or thin, just depends on the pan you use. Mine are thin.
